Hi Heddwen, what about chicory for witlof? Abe & Cole’s cookbook on vegetables refers to witlof that way. Looking forward to your answer. I enjoyed reading the newsletter. Keep it coming! Ellen van den Haak

Hi Ellen, as a Brit, I indeed call "witlof" "chicory". Americans, however, call "witlof" "endive" (or "endives", each little head of chicory counting as one "endive").

(And that's only broadly; some Americans use the terms the same as most Brits, some Brits use them as Americans do, some others just use different terms entirely. Confusion reigns!)
